Happy Frozen Custard Day
For most of the country, frozen custard is an occasional treat with many thinking that Dairy Queen is THE place to get your frozen custard fix.
In Wisconsin, we know better. Frozen custard is NOT ice cream.
Let’s start with a discussion of the difference between frozen custard and ice cream.
Frozen custard is made with 1.4% pasteurized egg yolk in addition to at least 10% milkfat. Ice cream does not have the egg yolks.
When frozen custard is immediately pushed out of the freezing chamber it’s created in which keeps its air content much lower than that of ice cream. It is not stored or frozen so it is served at a slightly higher temperature.
This results in a richer, creamier taste with lower fat, saturated fat, and calorie count than ice cream.
